Since everyone and their mother is going gaga over Libby’s canned pumpkin arriving in stores I decided to lemming and made delicious pumpkin pancakes yesterday.
Did anyone else know Illinois is the top pumpkin-producing state? Pumpkin chuckin’ contests? We’ve got ‘em. The pumpkin shortage last year was a testament to the weird cool and wet summer we had. Nestle’s Libby’s is just up the road from us here in good ol’ Central Illinois.
I’m no chef, no baker, no cook, so I had my doubts that I could pull this off. I mixed Aunt Jemima pancake mix with milk, coconut oil, an egg, 1/4 a can of pumpkin, a little sugar, vanilla, and a bit of cinnamon and allspice.
It turned out delicious! The texture was great, and it had a good pumpkin taste without being overwhelming. After topping this with a bit of real maple syrup I’m checking it off in the “success” column!
